Ingredients:

  • 500g boneless chicken (cut into bite-sized pieces)
  • 2 tablespoons yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 1 teaspoon chili powder (optional, for extra spice)
  • 1 tablespoon chopped fresh cilantro (optional)
  • Wooden or metal skewers

Instructions:

  1. Prepare the Marinade:
    In a large bowl, mix yogurt, lemon juice, olive oil, garlic paste, ginger paste, paprika, cumin, black pepper, salt, and chili powder. Stir well to combine all the flavors.

  2. Marinate the Chicken:
    Add the chicken pieces to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

  3. Prepare the Skewers:
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.

  4. Cook the Skewers:

    • Grill Method: Preheat the grill to medium-high heat and cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
    • Oven Method: Preheat the oven to 200°C (400°F) and bake for 20-25 minutes, flipping halfway. Broil for the last 2 minutes for a charred effect.
    • Stovetop Method: Heat a little oil in a pan and cook the skewers on medium heat, turning them every few minutes until the chicken is golden and cooked through.
  5. Serve:
    Remove the skewers from the heat and let them rest for a minute. Garnish with fresh cilantro and serve with mint chutney, yogurt dip, or a side of salad.
