âś… 2 bay leaves

âś… 2 green cardamoms
âś… 1-inch cinnamon stick

For Biryani Layers:
âś… 2 tbsp ghee
âś… 1 large onion, thinly sliced
âś… 1 large tomato, chopped
✅ ½ cup milk + pinch of saffron
âś… 1 tbsp chopped coriander & mint
Step-by-Step Instructions
Step 1: Marinate the Chicken
Mix chicken with yogurt, spices, and lemon juice. Marinate for(overnight for best results).
Step 2: Cook the Rice
Boil water with spices and salt.
Add soaked rice, cook until 70% done (firm inside). Drain and set aside.
Step 3: Cook the Chicken
Heat ghee, sauté onions until golden.
Add tomatoes, cook until soft.
Add marinated chicken, cook for 10-12 minutes until tender.
Step 4: Layer & Cook Biryani
In a heavy-bottomed pot, add a layer of chicken, then rice.
Sprinkle saffron milk, fried onions, coriander, and mint.
Cover and cook on low heat (Dum method) for 20 minutes.
