Ingredients (Serves 2)
For the Rice:

– ½ cup blanched spinach
– 1 clove garlic, finely minced

Protein Choices:
– 100g cooked chicken, tofu, pork, or beef (stir-fried with soy sauce, garlic, and sesame oil)
Toppings:
– 2 fried eggs-½ teaspoon sesame seeds
Spicy Sauce:
– 1 ½ tablespoons Korean red chili paste (gochujang)
– 1 teaspoon soy sauce
– 1 teaspoon sesame oil
– 1 teaspoon honey or sugar
– 1 teaspoon rice vinegar
– ½ teaspoon minced garlic
– ½ teaspoon sesame seeds
Instructions
1️⃣ Cook the Vegetables
– Lightly sauté carrots, zucchini, and mushrooms in a little oil until tender, a pinch of salt for flavor.
– For spinach, blanch it in hot water, drain, and toss with garlic, soy sauce, and sesame oil.
2️⃣ Prepare the Protein
– Stir-fry the protein with soy sauce, garlic, and sesame oil until fully cooked.
3️⃣ Make the Sauce
– Mix gochujang, soy sauce, sesame oil, honey, vinegar, garlic, and sesame seeds in a bowl. Adjust sweetness or spice if needed.
4️⃣ Assemble the Bowl
– Add warm rice to a bowl, arrange the cooked veggies, protein, and a fried egg on top. Sprinkle with sesame seeds.
