If it has excess liquid, keep it for extra flavor.<br \/>\nSlice the pork, onion, and tofu.<br \/>\n2\ufe0f\u20e3 Saut\u00e9 the Kimchi and Pork<br \/>\nPlace a pot over medium heat and drizzle in sesame oil.<br \/>\nAdd the pork and cook until slightly browned.<br \/>\nAdd the kimchi and stir-fry for 2-3 minutes to release its deep flavor.<br \/>\n3\ufe0f\u20e3 Make the Broth<br \/>\nPour in water (or anchovy broth for extra depth).<br \/>\nMix in gochujang, gochugaru, soy sauce, sugar, and minced garlic<br \/>\nBring to a boil, then reduce to medium heat and let it simmer for 15-20 minutes.<br \/>\n4\ufe0f\u20e3 Add Tofu and Simmer<br \/>\nGently place tofu slices on top.<br \/>\nLet it simmer for another 5-10 minutes so the flavors blend well.<br \/>\n5\ufe0f\u20e3 Finish and Serve<br \/>\nSprinkle chopped green onions on top.<br \/>\nAdd salt and pepper as needed to enhance the flavor.<br \/>\nServe hot with steamed rice.<br \/>\nTips for the Best Kimchi Jjigae<br \/>\nAged kimchi (at least 2 weeks old) gives the best deep, tangy flavor.
